Last I remembered, a phone was a phone, and you could go anywhere in the world and call. I just asked the wife about that and she said she's tried it. Standing next to one of friends with an Apple. It did not work and she tried everything you could think of. After she turned the phone on back to normal, all the test messages came through!?!?

If all you want to do is text from one iPhone to another using wifi: - Put the phone into airplane mode -- before you go into Canada. - Turn wifi on. - Text away. Iphone-to-iPhone texts are automatically sent over the internet. Look at her text messages that she has right now. Those that she sends to non-iPhone users (like you) will be green, and it will say "Text Message" in the input field at the bottom. Then look at texts that she's sending to other iPhone users.
