I have the TP 20 wireless meat thermometer and the ThermoWorks MK4 instant read thermometer....very happy with both

I have 3 nice Sockeye fillets brining to smoke tomorrow. 9.99lb at SW, about a 1lb each in size.
They will hit the Smoker tomorrow. About a 14 hour brine and then smoked @ 165 in the Camp Chef.

What smoke are you planning on using? I'd have a hard time picking/choosing for fish.....
You'll have to let us know how long the 'fishyness' sticks around in the smoker afterwards.

I'm down to three choices for Pellets. Pecan blend 100% Red Oak Apple blend I'm leaning towards the Apple for Fish, but ideally i would use Alder. I may just have to go find a bag somewhere though. I've never had a problem with a Fish odor after smoking it, probably because it's already cured. The only thing the Smoker smells like....is Smoke.

Out of the brine, rinsed off and forming the pellicle I'm going with the Apple blend for Pellets.

CC WW 36, WSM 22, dont necessarily NEED all that, but they make them, so.....

I just feel bad about never using my offset stick burner anymore. It's an Oklahoma Joe's and it really is a great smoker. I have just gotten lazy...

It just needs to ‘self-identify’ as a pellet-pusher, and you’re good Orrrr, your Camp Chef could self-identify as an off-set, and….bingo!, no more guilt… I hear ya, though, the more aches & pains I get, the less stick cooking I do…

I just got rid of my OJ Highland(I think thats the big boy), loced that thing. I'm cooking less and less due to schedule, so needed something the wife could fire up easy and get going. Real happy with the Woodwind 48 though.
