Jeezus....How did that thing track you?? On another note, the other day we were talking about Vintage Cast Iron at work. My Co-worker then commented about having youtube vids for Cast Iron popping up in his feed. Everything is listening.

And when you use the thermometers, you start by "setting up a cook" in the app. So in this case, I selected Beef, then Filet Mignon, then my target internal temp. That's how it knows that I had filet mignon for dinner.

So what is the best Charcoal for smoking? The English stuff I first got here is a pain to light but it burns great and lasts hours. I just got a bag of Royal Oak from base and it lights easy but burns too fast for a long smoke.

Its just TOO easy and it tastes REALLY good! I'm still working off my last one - had a sammy last night from it - it just keeps giving! 5.5# is a HUGE loaf! I did a lot of searching on that - watched a lot of vids on it - I'm not convinced there is a 'best' one out there.... there are just 'differences' in how they burn... Lump supposedly burns hotter and maybe longer depending on brand, some coals burn with more ash, some are bigger and others burn faster..... I've come to the conclusion that its not important which one you use --- its knowing how the one you are using is going to burn. I have used KBB and competition, Kroger, Weber and Embers so far and honestly I haven't been able to tell any significant difference in final cook quality --- it comes down more to the smoke conditions than the coal IMO. Burn times come down to knowing how fast the coals will burn and setting up the coal bed accordingly --- I've been having really good luck doing a 'snake method' in my WSM - last cook I got a solid 8+ hours with ~8# of coal - I thought that was pretty good - especially considering that the temps were in the 30s while I was doing it. I haven't tried a 'minion method' yet for long cooks - only shorter ones. My problem is that it seems to take an awful amount of coal for shorter cooks... I'm trying to source some material to make a smaller 'coal ring' for the WSM - I think the problem is that with smaller amounts of coal it tends to spread out in the base into a thinner coal bed (~1-2 coals high) - I'm thinking if I can keep them tighter together and have some 'depth' to the coal bed (3-4 coals depth) I can achieve a more controllable and predictable burn with the minimum amount of coals needed. One of the 'real' criteria that does have some merit is the amount of 'floating ash' the coal produces --- you know, ash that carried up with the heat while its burning - you'll see it coming out the vent. I have seen some differences in the coals, but luckily the WSM has a nice height advantage where it really doesn't seem to be a real problem for me. One of the things I can't understand from all the videos I've watched is how all these guys just dump a WHOLE bag of coal into the smoker to do a 3 hour chicken cook???? WTF? Sure you can snuff it out when done and reuse the partially burnt coals --- but I'm finding that to be a pain in the ass - I'd rather use the RIGHT amount for the length of cook I'm planning. I'm always amazed at how little coal is needed for long cooks on the Weber kettles in the vids I see though - I know the WSM will need more, but I just hate wasting too much coal for short cooks.

Has anyone ever smoked with pear wood? I may have a line on some really nice (but green) pear wood... I don't know if its worth my time to go get way more than I could ever use, but I'm curious to try some out. The reality is that I could buy a bag of apple chunks cheaper than what it would cost me in gas to get the pear wood --- but the thing is.... you NEVER see pear wood in the stores.
