Couldn't help myself today.... glad it was dry - no wind - and a bunch of sunshine!!!

I don't know what I did different today... but I was expecting them to run long today --- but they finished up in just a tad over 3 hours! And tasty as hell --- I don't know if its because I haven't had one for + months.... but DAMN - SWEET smokyness!!!! My neighbor was floored....

Honestly --- I've been pushing the bounds of smoke - I actually TRIED to get to the 'too much smoke' point, but failed miserably.... But damn --- it was all good smoke!

after a few hrs smoke will not "make it more smokey" just turn it to jerky and leather skin. if you can next time stand it up with a cheap beer (keystone, coors) and stand it up thru cavity. close the flap at the top oh juicy
