Couldn't help myself today.... glad it was dry - no wind - and a bunch of sunshine!!! Attachment: 20230119_162046.jpg I don't know what I did different today... but I was expecting them to run long today --- but they finished up in just a tad over 3 hours! And tasty as hell --- I don't know if its because I haven't had one for + months.... but DAMN - SWEET smokyness!!!! My neighbor was floored....

No stuffing -- just a dusting of rub the night before.
Honestly --- I've been pushing the bounds of smoke - I actually TRIED to get to the 'too much smoke' point, but failed miserably.... But damn --- it was all good smoke!
