The results were pretty tasty, but the cook time was way longer than I'm accustomed to (16 hours) and I think the resulting product wasn't as moist. I always ride the stall on brisket, and then wrap for the resting period once she comes off the smoker.

I'm considering a pellet grill, and kind of want to know if anyone knows if special ones are needed for 8 hour overnight unattended cooks without feeding pellets into it in the middle of the night. I know Traeger advertises that the Double wall insulated interior is good for overnight cooks, but I don't know if its strictly necessary if all you care about is whether the hopper has enough to feed it all the way through the night.

Those pork butts were done overnight. 22 pound hopper. There are some that are bigger (and definitely some smaller), but I've found it to be more than enough for overnight cooks without having to worry.

Camp Chef Woodwind WiFi 36 with Sidekick: https://www.campchef.com/wood-pellet-gr ... -and-specsI think I was on the website this past week and the total price for that setup was $1300. I'm seeing it at $1600 today. I recall buying it in January for $1100. ...but there's no inflation and everything is fine .
