He has inspired me to try and do Pastrami! FM has Angus Corned Beef on sale for 50% off while supplies last, looks like I'm making a run tomorrow to check.

I got all overstimulated about all the Pastrami talk and ran down to FM. They had plenty of the Angus Corned beef left at 50% off. I picked up a couple 4 lb bags and some Coriander, Black Peper corns, Sauerkraut and Cabbage. Using a Corned beef saves the brining and wait for Pastrami. It's already done, and thanks to Steve and cmica I got the tip that the removal of the saltiness with a water wash had already been done with a Corned beef. Oh, and i balked at the price of smoked Paprika and passed. Fail on my part, the recipe calls for it. I'll be hitting the store again tomorrow. Mmmmmmm.... Pastrami. I'm not "Chicken" to leave my comfort zone, It's good to try new things in the Smoker. Doing the same old thing over and over is boring.

In case anyone is interested --- daily deal on Knotty Woods pellets at Home Depot -- a bag of Almond and a bag of Almond Cabernet for $39 shipped. I really like the almond myself and most of the 'Q vloggers raved over the wine infused pellets.... I really want to try them! Time to pull the trigger Pablo.....

Pastrami is in the Smoker at 155 internal and getting close to wrapping. It's fun experiment so far, we will see how it turns out. Most stores have Corned beef for about half price right now, and they keep in the fridge for like two months since they are brined. It's the cheater method for Pastrami, you don't have to brine your own flat and can smoke it right after seasoning. I used "Kratz's" NY deli rub recipe, supposed to be all that. I must say that Madpick's rubbed up Pastrami was way prettier though, that's how it's supposed to look IMHO. FM has Angus Tips at 2.99lb, that's where i got the one in the Smoker. It had been a long time since I had a Corned beef Sammie, so i did one the old fashioned way too and it was great! Been eating that for a couple days and it's almost gone now. I'm not a Rye bread guy, but the SF Sourdough bread with Mustard Mayo and lettuce is delicious!

And they say the wine almond is even better. I'd say smoother and sweeter than pecan without being over bearing - hard to do 'too much'. I was going to use almond on my legs tonight.... but I'm running low, so I just did apple/maple/oak.... I'm wishing I would have done almond now... even tho it was really good. Oh --- and you need to try some plum!

JMB, I'm trying to figure out why you are talking Pellets and flavors with them when you make posts like this about guys who use Pellets. "I pity you guys that buy pellets in a bag... where's the fun in that?" in your post about getting some Plumb Logs. You use them too, so what am I missing? Throw a Chunk of real wood on top of Charcoal and it's better? Or using a smoke tube with pellets in a Gas grill? If you want to be a purist using only "real" Wood like Logs, get a stick burner. Right now you are a Pellet guy too, don't pity us.
