Okay, I changed the title of the thread to help Kyle feel like less of an outcast. We still need to work on the other issues, but at least we'll embrace his alternate pressure cooker lifestyle.

I saw a new recipe that looked good, so I went for it tonight . . . and we loved it! Recipe: CREAMY INSTANT POT CHIPOTLE SHRIMP SOUPBacon, shrimp, and chipotle all in a chowder? What's not to love?!! I made a double batch in my 8-quart IP. I could have made a triple and it would have fit . . . I could probably have done a quadruple batch if I was willing to overlook that "PC MAX" line on the pot. Which I've been known to do. I pretty much followed the recipe except: 1) I used more shrimp than it called before, because that's what I had in the freezer -- 1.6 lb instead of 1 lb. 2) Since my shrimp were fairly large (20-25? Maybe a little bigger?), I cut them all lengthwise. This causes each side to curl up when it cooks, kinda cool I think. 3) Instead of using 1.5 tsp salt for my double batch, I used 1 tsp Lawry's seasoned salt and 1 tsp Old Bay seasoning. 4) I added a loaf of sourdough on the side, hehe. It tasted probably just about like you imagine it would, plus it was slightly spicy from the chipotles and the Old Bay. I think it was just the right amount of spice, enough to make you notice but not super-hot. Spice-a-phobes might want to cut back, though.
