Yeah, “Instant Pot” doesn’t just mean a pressure cooker anymore. Could be sous vide, or air fryer, or blender, or coffee maker....

This isn't entirely Instant Pot-related, but it's mostly, and it ends that way, so I'm posting here. :bigsmile:

Every year a friend of mine gives me a shit-ton of the Italian prune plums, and I struggle to devour them all -- hopefull with some help from others -- before they go bad. They are REALLY good eating, but eating too many will turn your digestive system into an autobahn, so it's typically a rough week. :rofl9:

This year I'm endeavoring to do better.

This was my dehydrator yesterday at mid-day:

Then I got the call, and here's the dehydrator a few hours later (yes, washed):

At this point the dehydrator has been cranking away at 135 degrees for almost 20 hours, and it appears to have a few hours to go. So that's great, I'm sure they'll be good, but MAN it takes a long time! Too long, when you've got a shit-ton of plums to get through.

So I found this recipe, and decided to give it a go in the Instant Pot: Vanilla Spice Poached Plums.

Here they are before cooking:

And then the final product after using the "Saute" function to boil them down:

Sixty plums, a quadruple batch of that recipe, gives me just over 8 cups:

And OMG this is some tasty stuff! Nice and sweet, it makes me yearn Selador-style for a bowl of vanilla ice cream that needs a topping! I'm actually freezing it in roughly 2-cup servings, in Ziploc bags, with the intent of using it to flavor my homemade yogurt.

I've made eight batches (per that recipe) so far, and batches 9-12 are in the IP right now . . . I'm in full production.

This has turned our to be about my favorite dish we make in this thing. 3rd time I believe we've done it.
Grab yourself some country ribs, pork shoulder, etc. Trim it from excessive fat. Cube up to whatever size you like. Brown in the Foodi on sear/saute. Seasoned with garlic powder, seasoning salt, and Mexican Oregano(Key!).

Costco sells jars of these chilis. Very good! Dump it in. I also added our home made minced Garlic, homemade green enchilada sauce. A couple home grown pablanos. Have to be careful as the kids eat it. Can add all sorts of stuff to taste/spice.

Dump it all in and it will look like this, ish.

After 30 min on pressure cook, let it release. I will then let it simmer on the med sear/saute function until it thickens to the consistency you want.

The wife makes her own Mexican rice. We top it with the Pork Verde, and scoops with the tillas. Tapatio, green Tabasco, Aardvark, etc to taste.
