 Hatch Chile Season / Favorite Recipes?

Hatch chiles have invaded our local supermarket :bigsmile:

Today I had store-made hatch chile pico de gallo and there's now a big pot of hatch chile verde (New Mexico chili) simmering on the stove, based on this recipe:

This morning much earlier I roasted the hatch chiles on the BBQ, my wife roasted the tomatillo's, then fried the pork cubes in the dutch oven.... Now everything is simmering... The chile verde is pretty spicy but not beyond edible, still pretty tasty...

Anyone else seeing hatch chile's in the supermarket? Favorite recipes?

I bet you can find stores in your area that will roast them for you. While they are still hot put them in a plastic bag, and they will steam for you. Then after they have cooled then rub the skins off. I then use them whole on everything, burgers, eggs.

Thanks Chuck for the video. I hadn't thought of the paper bag steaming approach. I built up the coals on one side of my charcoal grill (indirect fire). Then I roasted the chiles over one side, moved them to the indirect/no direct heat side, closed the lid and let them cook another ten minutes or so.

Our HEB supermarket has a big ass roasting cylinder in front of the store on weekends and they sell the roasted whole chiles in the produce section. Very convenient.

I honestly just needed an excuse to fire up the BBQ this morning. Cooked a tri-tip roast to medium rare along with a batch of jalapeno poppers with cream cheese. After that roasted the chile peppers on the remaining coals. My wife scrapes down the chiles and removes the seeds in our house. Then I chop them up and get them ready for the recipe.

I roasted some under the broiler today, after steaming and cooling down I packed them up. Some I put in vacuum bags with the skin still on to be frozen, the rest I skinned and put in a jar.
