So, a comment for you, and a comment for you & Pablo....
The Sicilian bakery jukk referenced, was also one of the people in that TNT article I mentioned.
You may want to stop by, or give them a call, and see if she'll make you a batch of 'authentic cannoli...she knows authentic, so...
As far as Pablo & his ingredients, or you getting friends to make cannoli, there's a great place for supplies y'all may have heard of...
Big John's PFI....
It's in the Sodo area, warehouse district....
In a warehouse across gravel & unused, bumpy railroad tracks.
It has everything you ever need imported from Italy. Cannoli rolls, special anchovies, cheeses, prosciutto, deli meats, pastas, flour, etc.,...
It's where I get "00" flour for pizzas, pine nuts that aren't from China....
It's definitely worth at least 1 visit, but it's a warehouse....it ain't glamorous....

I'm still looking... Came back here after 40 years on the east coast, and spent some time in Italy also. Sicily, Napoli, and Roma... Have found some nice places but maybe my expectations are too high...

Famous salad dressing that is like crack (they started bottling it and selling it at the Food Giants and other grocery stores, but of course while close, it wasn't 100%) When we'd go there the lines would be out the door and down the block... dad would walk us up front and the doorman/Maitre D' (usually one of the owner's sons) would greet my pops warmly then show us right in bypassing the line.

Big John's PFI also has a great variety of cheese if you're into that. Great place.
