Been playing with the Sous Vide for about a year now. Trying various finishing techniques. (Torch, Skillet,grill)
I’ve finally settled on seering in fire on a Kamado Joe, using lump charcoal. 127° in the sous Vide (2hours+) 8 minute rest 1-2 min in the flames. Rest another 5-8 min. Enjoy. Cooking over wood/flame just cant be beat for the flavor IMO.
Kamado’s are a bit spendy. But I do everything from pizza, butts, wings, Dino Ribs, baby backs, fish, smoke jerky & bacon etc. all comes out amazing. Cooking at temps from 225-750
If you are a family if 1 or 2, Amazon has the “Joe jr” on sale for $300.. it’s a smoking price to get you in the door. Costco usually has the “classic 2” size in stores in the summer @$900. I got the Classic first, and have been using it for a year, and like it so much I just got the Jr from amazon. The Jr is killer for 1-2 steaks and the smash burgers... oh my.....
