Also did a huge breakfast this morning on the blackstone that consisted of my homemade bacon, eggs, hash browns and biscuits n gravy. But no pics. Busy weekend of hosting the in laws. Everyone just left with full bellies and heavy eyes.

Boneless skinless chicken breasts are $2.99/lb at Safeway this week . . . and it's buy one package, get one free. So for $1.50/lb, I've added some to the freezer, and I decided to cook some up tonight.
I sliced them into small pieces, added some 10+ year old rub of some kind from the back of the cupboard, and seared the shit out of them in a cast iron pin with just a tiny spray of avocado oil:
(And yes, the chicken by itself is pretty damned tasty.)
Then it was into some simple chicken tacos:
Soft tortillas with Sam's avocado cream smeared on them, then the chicken, then some cilantro, and finally some pickled onions for a little zing.
I recently discovered pickled onions, and I'm really liking them for this kind of thing. It takes about five minutes to make a batch, and they are GOOD!
That looks Damn good buddy! Beats the heck out of the Spaghetti i made.

- Sliced a large red onion and stuffed the pieces into a quart jar. - Boiled one cup apple cider vinegar and one cut water, with a pinch of salt. - Poured the boiling liquid into the jar, and stuffed down the onion bits to make sure they were all covered. - Added about a dozen peppercorns to the jar. - Let it cool, popped it into the fridge . . . and started eating them the next day.
I've been really enjoying them on burgers, hot dogs, etc. They'd probably be really good on a lot of salads, too.

I finally got around to making some enchiladas from some smoked pork the other night.... pulled pork, black beans, finished off a sweet onion, orange pepper and some sour cream too.... cleaned out the fridge nicely. Pretty easy, just didn't know the right proportions to use or how much to mix up..... so I just winged it --- I don't think I could ever duplicate it so perfectly again, but it turned out to be the perfect amount of everything

Man.... did that turn out tasty Definitely gonna do this one again. I picked up some chicken breasts yesterday too that should be prime for some chicken enchiladas once smoked It was just too easy and too good....
I had reheated leftovers last night and I have to say.... I think they were actually better the second time!!!
