Necro-merging! Slightly off-topic but close enough, dammit, I decided to try my first "pie" today, and I made it the peach variety. I followed this recipe here: https://www.sparklestosprinkles.com/ins ... moonshine/Except I doubled the alcohol . . . a full 750ml bottle of Peachtree, and a full 750ml bottle of Everclear. I don't want no wimpy sugar water. I also couldn't find the exact type of juice that the recipe specified, so I used Apple Peach Mango juice. Here's the goodness before the alcohol was added, just out of the Instant Pot: And here's my final product: Hopefully I didn't shoot myself in the foot with the extra alcohol, but I don't think so. It tastes pretty good right now, and I'm guessing it will get smoother with time . . . is that right?

Bear in mind you said yours was higher proof than my Apple Pie but my recipe proofed at 47.5. Not that it’s a contest but, you know, nanny nanny boo boo stick your head in doo doo!

That peach pie was good (sweet and peachy) when I just made it, but it definitely was a bit harsh from the Everclear and I decided to leave it alone for a while. I tried it tonight, after two weeks ... oh my. This is easy-drinking stuff, and I’m very glad that I doubled the alcohol.
