I snag griswold's from antique stores and ebay. Not a fan of the texture of lodge

I dont think any of the pans regardless of length will offer a cool enough handle to touch bare while cooking.

I prefer the cloth handle cover instead of the leather or gross loose fitting "condom" silicone covers.

I tend to catch them on fire often since we use a gas range. So the smell of smoldering cotton is a familiar aroma in my kitchen. Wet down the edge, and its all good. :bigsmile:


I will also say, GAS/FLAME and iron go together like guns n ammo.
These pas originate from the days when food was cooked on heat from a flame.

I'm still trying to positively ID the make of a vintage #8 skillet. It has no markings i can see beyond the 8 on the bottom, though it came with a Matching (Well marked) Vollroth Lid.
That doesn't mean it's a Vollroth Pan though.

I've used the cotton handles too, and they do better than the silicon ones for fit for sure. I have a gas stove too, and we have to remember not to lean a kitchen utensil on the side of the pan. I've grabbed a few hot spatulas in the past.

Hey if you want to drop some cash on a new cast iron, this one has a longer handle coated in silicon. For me I like the longer handle so you can get a little more leverage. Our other pans are All Clad, and they have great handles. Love those pans.

Today I tested out the new-to-me Dutch oven. I’ll be delving deeper once I find a good butcher in Puyallup to sell me some steaks and bacon.

Thanks to Old Growth for giving me tips on cast iron cooking today.

I am assuming the Vollrath 8 marking is under the old seasoned crust on the top of the handle where it meets the pan. I don't want to scrape it off to look though, that shit is old.
That's the Lid flipped over into the Pan in the top pic, no markings on the base of the pan itself. The lid fits it perfectly.

Edit....I took a better look at the underside and there is a sideways #8. It's a Vollrath from the late 40's i think. Sits flat, great shape with very old seasoning and the original lid. :thumbsup2:
