Yessss. So why are your berries at the bottom, and mine are at the top? Do you have anything else in there besides vodka and sugar?

And don't you dare say "better vodka"....

Not exactly sure. I only put a small amount of sugar in there though.

All right, all of my blueberries are processed. It all went well until I tried to pour the last bit out of the bag, and dumped a pound or two into both sinks and all over the kitchen floor. icon_eek Yeah, that batch got an extra rinse!

So I used some of them for the vodka stuff above, and then I turned the rest into compote. Fill the Instant Pot liner mostly full with blueberries, add a cup of water, the zest of one lemon, the juice from one lemon, a sprinkle of cinnamon and about 1.5 cups of sugar:

Cook it at high pressure for five minutes. But lemme tell ya, a pot full of frozen blueberries takes a long time to get to pressure, so don't be fooled by the "five minutes." Then do a quick release, and boil using the saute function for . . . a while, I dunno, until it boils down a bit.

Most of this compote is going to get frozen in quart-size Ziploc bags to flavor my weekly batch of yogurt. However, I did run some of it through the blender, then poured out some fruit leather (think fruit roll-ups), which is now in the dehydrator. More to come on that when we see how it turns out.

You have been busy Steve, 30lbs of Blue berries processed in a day?

Yup. It wasn't nearly as hard as I thought it would be. Having two Instant Pots (plus an extra liner) helps. Though, realistically it would probably be just as fast to do it in a pan on the stovetop, but I'm an IP whore. :rofl9:

I just like to eat them frozen!

Or in pancakes or warmed up and over vanilla ice cream.

Interesting . . . never really tried that. I like snacking on frozen grapes and cherries though, so I'm sure the blueberries would be good too.

Well yeah, but that's just cheating. :ROFLMAO:

My kitchen has looked like the set of Dexter throughout the day. Anyone need some bags of A positive? :wink05:

Each of those quart-size Ziploc bags has 2.5-3 cups of the blueberry compote in it.

Image

And that's the final result for the freezer . . . 14 bags of blueberry compote, which will get me 14 weeks of homemade blueberry yogurt for breakfast. The reddish bags to the right are plum compote, which is what I've been eating.

Still working on the fruit leather....

And yes, Costco had a great sale on Boursin.

I remember those. It took me like 2 years to get thru my box but it was fantastic.

Made blueberry muffins this morning.
I hate baking.
I’m pretty sure this is the first time I’ve ever made muffins. They turned out fine. I will look into other muffin recipes.
I mean I got lots of blueberries to practice with.

All right, this is my last installment, for this batch anyhow. Today's topic . . . fruit leather, aka "fruit roll-up," blueberry version.

I put some of that blueberry compote into a blender and liquefied it. Then it was time to bring this reloading tool into the house, hehe. And don't worry, I did actually wash the interior!

Image

I bought some soft green silicone "trays" specifically for this purpose, so I sprayed each one with oil, put it on a tray and poured in the blueberry mixture. Unfortunately the trays aren't really level (too many batches of heavy brass?, so I couldn't properly fill the silicone tray without it running over the edge. Put here's what each of the five trays looked like:

And roughly 12 hours later:

Rutilate had warned me not to make it too thin, but I did it anyhow because of the "not level" issue mentioned above. If I do it again, I'll try to find a way to level things out so I can pour it in thicker.

Image

I cut each of those big rings in half, then rolled them in parchment paper for later snackage. One of the rings I just cut into pieces for, uh, more short-term use:

Image

This is good stuff, I love the flavor. I do wish it was a little thicker and softer. This is the kind of stuff you don't want to have around the house, but fortunately(?) I don't think that will be a long-term problem.

All right, I lied. Sue me.

I made a batch of yogurt last night, let it strain today and then tonight mixed in a bag of the blueberry compote. Here are two quarts of super-thick Greek yogurt with the blueberry goodness on top:

And mixed in:

Oh man, this stuff is like candy! Not super-sweet, but a little sweet, and VERY flavorful. :inlove:
