Smoked an 8lb pork shoulder. Maple n Alder. Its getting pulled right now. About to have pulled pork sammiches and coleslaw. Mmmm!

Served, with asparagus and lobster tail

I didn't know when my wife would get home, so I just threw the steak in to cook sous-vide at 135. That'll be the middle of medium, and would be ready to deal with between 5pm and 7pm, so I had a huge window of time to be ready.

Next, I stuck a couple of skewers through the lobster tail to stop it from curling and boiled it for 90 seconds, to free the meat from the shell, then put the tail into an ice-bath until it's cooled. I cut the tail in half, and peeled the shell off (badly. I wanted to present the lobster tail in it, but it all broke). Bagged the tail with butter and spices, and put that in the fridge.

Next, I sliced the last inch off the asparagus, and peeled the bottom third of what was left, to make it all nice and uniform. I gave it a quick rub with oil, salt and pepper.

At this point, I'm 15 minutes from the front door opening to dinner on the table.

The asparagus was cooked in a griddle over medium heat until one side started to char a little, then the heat reduced to low and the asparagus flipped to cooked through and char a little on the other side, too. The lobster also cooks sous-vide at 135 too, for 15 minutes. 10 minutes in to that cook time, the steak was pulled out of the water bath, bag sliced open and the steak dried before being placed into a HOT pan with oil that's starting to smoke, a garlic clove that was crushed lightly, and some herbs. This seared most of 1 side in about a minute and a half, then I flipped it, and basted until the whole of the top side looked perfect. I flipped it onto the fat-cap, and basted the second side to make that look right, and transferred to the board to let rest for a couple of minutes, and then slice and serve. Top with the lobster straight from the bag.

Yesterday I did a sous vide rib eye with green stuff and a wild mushroom risotto. Tasty, steak was on point.

Today still had the stuff for sous vide out and did a flat iron steak with a golden oak shitake mushroom red wine sauce. Also added a bacon and garlic mash potatoes. The veggie is oven roasted carrots with a honey balsamic vinegar glaze. When I plated my plate I was in a hurry and got a bunch more sauce on the carrots. The kids loved the carrots and were eating while I plated my plate, so the carrots are a little sparse. Super tasty all around.

Well it may have started snowing while I had the smoker going but it only took me 5 hours to smoke the turkey breasts. Then I made the sammichs. they were made with Grilled Soudough, Havarti, swiss, tomatoes, avacodoes, smoked turkey and PIG CANDY!! Damn they were good and so filling
