Is this one of those things (like pulled pork!) that you could cook it all, then break it up into smaller portions to vacuum-seal, and then re-heat the vacuum-sealed bag in sous-vide when you're ready to eat it?

Probably, yes. But in 4 the time since a year before that article I linked, I haven't ever tried it.
I probably should.

WanderingWalrus wrote: Lengua tacos. The problem with tongue is getting it in a small enough amount. I want to eat *some* tongue, but I don't want to eat 3 or 4 pounds of it and nothing else for several days. I'm tempted to just get a tongue and sous-vide the whole thing, but I also want to season it and debate smoking it, and there's also the "what do I do wit the leftovers?" aspect. Ideally I want 1 tongue in 3 or 4 portions all vacuum sealed, and then sous-vide that, but that means defrosting, cutting, repackaging and then sous-vide'ing. Let’s see, you’re in the Bellevue area, try Golden Steer Choice Meats...give ‘em a call and tell them what you’re after... https://www.goldensteermeats.com/Also, most Carnicerias, Mexican meat markets, should have what you’re looking for.

Waffles!!!!!! For some reason I was craving waffles this morning..... haven't made any in probably ~8 months for some reason.... Damn tasty belgian waffles for breakfast/brunch today! I'm gonna have to remember to do this more often... The recipe I found and scaled is perfect for making 3 nice belgians --- got thru 1+1/2 and decided it was enuff - save the rest for leftovers. I've found that they reheat really nicely in the toaster oven.
Going to smoke up some chicken for me and the neighbors today using my newly acquired PLUM wood --- really looking forward to trying it out --- already planning a chicken and waffle dinner with the leftovers now!

Picked up a small kit beaver the other day on a wco job, good one to cook
2 pans of mesquite in the little chief smoker, then into the oven with beef broth onions and apple chunks, 8 hours at 300degrees, couldn't even pick it up so tender it fell apart. Smokey pulled beaver sandwiches sooooo good!

Put 4 racks of baby backs on the smoker around noon. My wife “hinted” that’s it’s been a long time since I’ve made them.

Think about it a beaver is just a water cow. Anyone IV ever made it for thinks I'm fooling them and that it's beef

Smoked chicken waffles!!! I knew they would be good --- but damn - they were REALLY good! Attachment: Resized_20210921_194008_1866.jpeg Had a serving of Chick-fil-a polynesian dipping sauce sitting there.... made for the perfect sauce for it! Got enough for a repeat tonight except for the sauce, so it will be bbq sauce. Thinking I'm gonna need to pick up some sweet & sour sauce now..... Sis and I have been talking about making cornbread waffles to have with pulled pork for over a year now -- thinking plain waffles would be just fine now..... But one day I will make cornbread waffles just for the hell of it! Got some pulled pork thawing right now...

It's ok if one is a little bigger than the other. That's perfectly normal.
Those little bumps have me concerned, though.

Those little bumps have me concerned, though. I have to say I would swallow that before anyone beats me to it.
