I don`t think Chicken is hard to can. when I can it I like to season some with taco seasoning and some with a little chicken base. I just cut it into strips and add seasoning then put it in the jars. There is no need to add any moister as there is so much water in chicken it will baste itself. It does come out of the jar in a shred like texture if you cut into strips, this is ok by me as I use the taco chicken for taco salads and tacos.
