I am researching hunting/clay shotguns 12ga/20ga that would be good for a left handed/left-eye dominant shooter.
I found a Mossberg 500 pump that ejects left but for the same price I could get a right ejecting 500 with 2 barrels! So assuming I am wearing eye protection would it really be necessary to get a left ejecting pump shotgun?
I was also looking into break action single/double shotguns over-under/side-by-side and was wondering what people's opinions are. Single shots are a great value but their use seams pretty limited to just hunting.

I shoot left handed, and most of the time being able to easily look into the chamber is a bonus. Just wear eyepro!
Mossbergs are great choices because of the tang safety.

As you mentioned, Mossberg has probably the largest selection of left hand models in their line-up of any shotgun manufacturer. Remington has produced both the 870 Wingmaster pump and 11-87 semi-auto guns in field/hunting configurations with left-hand actions. Might be worth a gander around the interwebs to see what's up for sale. In new guns, Benelli produces a line of left handed actions in the M2 and Montefeltro lines, though they are pretty spendy: http://www.benelliusa.com/left-hand-shotgunsI believe Beretta also makes the A400 xplor model in a left-handed configuration.

As a lefty. I only use standard(right handed) guns. Even bolt guns. I learned as a small kid to shoot standard guns and how to safely manipulate them as a lefty. Now as an afult shooting anything else... is weird

I'm a southpaw. I have a few mossy 500 pumps. Neve been an issue. I also have a couple O/U's also not an issue. I've never had a empty hull hit me. Mossburg 500 vs Remington 870 is a wash. Quality is the same price point is as well. 500 is much more lefty "friendly" though for sure. For a cheap/starter gun they're both hard to beat.

I'm right handed, but I now shoot long gums left handed. A blood vessel broke in my right eye, and it turns out I'm left eye dominate. "Right handed" guns haven't been an issue for the most part.

I have a lefty Remington 1100 that I really like. They go pretty cheap on the used gun market from what I've seen. Browning Bps would be a good option. I've never had any issues with a right handed ejection shotgun shot left handed though.
