After a bit of a learning curve I am really starting to like this sharpener. http://www.worksharptools.com/sharpener ... eners.html

I'm a meat cutter and we have one at work for our knives. We're really happy with it so far.

For us cheapos that just wants a quick and easy sharpening. http://www.harborfreight.com/4-inch-x-3 ... 97181.htmlhttp://www.harborfreight.com/1-in-x-30- ... 61728.htmlYou can also get leather belts for these and use some metal polish.

After fully realizing the WS, and getting to know it. You will learn to appreciate it. They now have diamond belts to sharpen ceramic knives. I've had one for more than a year, but after talking to a friend I'm now convinced.

I like them, but stopped using mine since it makes the edge kind of proprietary. It makes a concave edge. It used to be called a Moran edge after a custom maker. It's harder to sharpen if you aren't using the WS or a slack sanding belt. There are some people who also use sandpaper on a mouse pad. Not so easy to do in the woods though. I'll probably just end up using it for my kitchen knives.
When you first get one, practice on some cheap knives first. It's easy to round the tip off if you aren't careful, and better to risk some cheap thing than a nice knife.
There are also a lot of other belts available for these. Into the incredibly superfine for those wanting to be able to whittle hair.

My friends and I process all of our game ourselves. That, along with e doing the smoker deal on the side, we cut quite a lot of meat. Between our group we have a couple work sharps. Yes, there was definitely a learning curve! YouTube was a big help. After getting the hang of it, we are definitely bug fans of them. Has made our prep time before processing, decrease significantly.
