2017 Ram 3500 with the 6.7 Cummins
Dealer says 15k between oil changes, is that for real?
Tell me about DEF... Am I going to destroy it if I don't use factory DEF? Are there good and bad brands out there that I should know about?
do these things really not require waiting for glow plugs to warm up before starting anymore?

Can't speak on the first two points, but Cummins engines don't have glow plugs. They have a grid heater, which heats the incoming air. My old 12 valve will start even on the coldest mornings without waiting for the light to go out.

I replace the oil on our truck once a year / 12k miles. I do use the full synthetic shell rotella t6.
You should be able to use any def fluid (is just urea / synthetic pee). But you can't stock on that because of short shelf life.

Once I bought a truck with a diesel, I've never gone back to gas. Even after a 5 day cold soak at -40F she fired right up.
I even have a diesel in my SUV now.

Mine is a 2008 3500 with the 6.7 diesel. Biggest piece of shit I have ever owned. Ate two turbos, one transmission, and one cat converter. Those are each $3k or more problems. Also experienced a whole bunch of smaller, but still irritating stuff. The Check engine light comes on more often than the dome light
I hope you have a much better experience. As for me, I will never buy another Chrysler product.

What is your sump capacity? Huge. And yes, pretty easy on the oil.
