I have been using Viet Huong 3 Crabs brand for years on the recommendation of a Vietnamese employee. Is there something better out there?
Tried 'Squid' and 'Baby', like 3 Crabs better.
Looking for something with more anchovy taste but less salt, if that's possible.

Red boat is the best I've had by far. 2nd would be tiparos. 3 crabs is popular with the Vietnamese because it's cheap as hell, it tastes pretty crappy
It's also best to store it in the fridge since it oxidizes over time

3 Crabs is a really good brand, and very popular. So much so, that there are copies, with pictures of 4 crabs and 5 crabs on the label-LOL. A lot of it is regional, like I know a lot of Filipinos that like Tiparos, but that's what they grew up with. It's a bit watery for my liking. Top of the line is generally considered to be Red Boat....it's fermented for over a year. Good Timing....Seattle Times Magazine just did a story on this a week ago, and talked about how Red Boat is thicker and has a higher protein count, but is also more expensive. It's also a choice for a lot of Chef's, and is a big secret -lol http://www.seattletimes.com/pacific-nw- ... ngredient/Put a few drops in your Bolognese, stew, etc., whatever, and it gives it a bit more depth of flavor. By the way, white people have been using fish sauce (fermented anchovies) since the 1830's..... It's called Worcestershire Sauce.

Thanks guys. I read an article that said Red Boat 40 is the Shiznit. I'll see if they have it at H Mart tomorrow. Just made some fried rice and it's missing something (ran out of 3 crabs).
Ya, last time I went there I grabbed some sauce, was ....4 crabs. WTF? Took it back and bought the 3 crabs.
Worcestershire sauce was an interesting story. Tasted horrible, so the inventor threw it out but forgot about a bottle. Tasted it a few years later and it actually tasted good. I'd sip it and fish sauce out of the bottle. Hahahaha

H-Mart is the best.. I love going into a store and not being able to read labels. I pick random things based off the pictures and label design.

Hahahaha. Had some Squid brand above the stove, evaporated enough so I had some big lumps of salt floating in it. Saturated slurry. Dated a Vietnamese gal who said her mom told her not to use 3 Crabs because it had hydrolyzed vegetable protein added. But compared to rotten anchovies soaked in brine for a year, seemed to be a wash. I stored my last couple bottles in the fridge (quart lasts me a maybe 3 months). Okay, I was trying not to be to geeky about this, but your girlfriends mom is right. It also has fructose, and the anchovy is anchovy extract. Both of which lend a sweetness to it. That's partly why some love it & some hate it. Red Boat has only 2 ingredients...wild caught black anchovies,and sea salt. It's also, like olive oil, 'first press'. Yes, they repress anchovies. Some of the 3 Crab, 4 Crab, 5 Crab is actually the same company, with different pressings of the same anchovies to create the extract. TMI, I know, sorry

I try to find authentic recipes from certain websites, then I Google something like 'best Gochujang', and study up on it, then I take a picture of the label of the one I want, & then go look for it. I want to make sure we'll eat what I bought

I have all three for the same reason, but once I got the Red Boat, I pretty much stopped using any other, unless I'm trying to replicate a specific dish for my wife's family..... I said white people because, invariably, whenever someone asks for a recipe, and then says "ooh, fish sauce, I don't eat that", it's a white person. They are usually surprised when they learn the Worcestershire Sauce they've used for years has anchovies Asian folks smile and want to debate which is better (edit: for reference, my wife is Asian, and I'm a big, dumb, white boy )

Yeah my wife is Asian as well. I can cook a few selected Asian dishes, but hers are so much better! I love fish sauce, I just don't like the cheapie varieties with salt as the first, second and third taste profile.

Picked up a 500ml bottle of Red Boat at H Mart for $8.99 Excellent! Best I've ever tasted. Thanks.
P.S. Maybe next time I'll buy the jars at Stars Fruit and Vegetables with the rotten fish still packed in it. Or maybe not.

I love the grilled fish tacos at Scuttlebutts Brewery on the Everett waterfront. They use rubio sauce on theirs and it's pretty dang good!
