 1st try at smoked spatchcock chicken on the Traeger

Came out awesome. So easy to do, cooks quicker this way and gets great smoke flavor!

nothing more than a little salt n pepper. I did put a little sprinkle of the Traeger brand chicken seasoning, but just enough for some color.

about 35 mins on smoke setting (160) then I set it at 250 for about 30 mins till I realized it wasn't cooking fast enough. I bumped it to 300 till i hit 160 internal temp and took it off and let it sit for a bit. I was kind of experimenting since I hadn't tried in the past. I plan on doing it again this weekend. I will pay more attention to my times and temps and report back. :-)

haha, that is what I paired it with. I smoked/roasted red, yellow and orange peppers along with some jalapenos and sweet onions, added a little bit of Yoshida's gourmet sauce and diced it all up. I added it to some rice and called it good.
