Massivedesign saw my Avi and told me about this section of the forums so I thought I'd share my meat with ya! I only started smoking meat last summer so I'm still a total noob learning my way around my cheap smoker. But I've had some pretty decent results thus far. The ribs in my Avi are from 2 weekends ago and they turned out pretty good. They weren't as fally-off-the-boney as I was hoping for but the flavor was outstanding. I also tried a bacon wrapped chicken breast. Pics below. So as of today I've done ribs, pork tenderloins, chicken breast and a beef roast. This summer I want to nail down brisket. If I can smoke a near perfect brisket I'll be a happy camper. Anyway, I'll be browsing this section a ton! Cheers!

Whats an Avi? I'm not familiar with that term. Electric, propane, pellet, real smoker?

It's a real smoker I guess if real means that it uses charcoal lol. It's one of those knock-off WSM's from home Depot. Super fancy.

Nice work. Im just starting to learn myself. So far I just started easy, salmon and a tri tip. Both came out tasting great.
Still working on getting temp nailed for long periods before I try something like a brisket. Im hoping to be able to get it stable without having to fiddle with it every 30-45 mins. (Add charcoal or wood)

good luck with your journey to making awesome brisket! i'm definitely enjoying mine. i learned a lot from reading and watching Aaron Franklin, i highly recommend it.

Jeff you can slice up the left overs and put them in a vacuum sealed bag and freeze it. Then when you want a little brisket just thaw a bag and then boil some water and toss it in (while in the sealed bag) to warm it up. It will come out like when you first made it. I learned this trick from a BBQ forum because with just me and my wife at home we usually threw a BBQ and had to invite people over and since I was having people over I would usually make several meats and several sides (ask Jager he has been to one of my BBQ`s) It got spendy doing it that way and cut into my gun budget
