Okay, couldn't think of the name of the place in my previous post, but there's a guy who makes authentic, Chicgo-style pizza.

There was a huge write-up sent to me in an email awhile ago, and he didn't have a storefront. You called ahead and ordered one, and it takes a long time to cook, and then you literally met his driver on a street corner to pick up your pie. If you google his name & Seattle Eats, you'll find the story I'm talking about, BUT, now he has a storefront. Unfortunately, further from me than his SODO set-up.

I haven't tried it yet, but have heard great things.

It's called Windy-City Pie

I'm surprised nobody has said Papa Pete's in Castle Rock. Pretty tasty if you want a bit of a drive.

I'm a fan of Old School pizza. Great dough and sauce.

Not a fan of Brewery City. Don't like the sauce or crust. Had it a few times and not a fan.

Pagliacci isn't bad.

Harmond in Tacoma used to make good pizza until they took it off their menu when they changed their menu to crappier more expensive food.

Although if you are ever in Ketchikan Alaska, Ocean View has a great chicken pesto pizza that is awesome.

Proletariat, as mentioned, is awesome. Great pizza, laid-back vibe, good beer...decent parking...go when it's still light outside :ROFLMAO:

No joke, on the pizza and when to go. A guy was shot in the head trying to break up a fight outside a bar on that block a couple of weeks ago.

I like Vince's for basic, but pricey-for-what-it-is pizza. Via Marina is good. In Georgetown there is Via Tribunali. Tutta Bella has multiple locations and is decent. Pagliacci is good.

But put a pizza stone on top rack, put oven as high as it will go, preheat stone for 30-40 minutes, Trader Joe's dough, let it get to room temp and stretch or roll it thin, keep toppings simple (don't weigh it down) and it cooks in just a few minutes. Will be better than all of these.

I miss neopolitan and NY style pizza back east.
