Picked up a box of Pub Style Cod Fillets at Costco, don't have any parchment paper.
Figured I'd either use foil or light oil? Both?
Battered, cooks at 375 for 14-15 min in a convention oven on 'baking tray lined with parchment paper'.

Parchment works well.

Foil will work.

Put them on a wire rack that stands off the foil (1/4" or 1/2") in a metal baking tray works nicely as well.

If you like those, try the Trident brand.

I pulled the rack out of the toaster oven, covered the baking tray with foil.

Didn't cook hot enough, the convection feature of my oven must not be very efficient.
Had to bump it up after 10 min and add extra time.

Next time I'll start at 425.

yeah - it's a trial and error, everyone has a bit different set up.

The Trident version calls for a 475°F Oven! Holly roasted goat. But they come out great.

Once I did a batch on parchment, then we had to go somewhere or something crazy, so I just put them on a plate in the fridge. Later that evening, I reheated at 350°F on the rack in the toaster oven and they were awesome.

You should definitely use parchment if you have it available.

If not, foil is your next best alternative.

And next time, buy real fish and batter it yourself :045:

We are talking fast food. Sometimes we don't have fresh fish on hand, batter made up and deep fryer fired up. Try the ale batter Trident stuff from Costco. You might be surprised.

I've battered a lot of fish myself.
Several of the large seafood companies in Seattle are clients of mine and often give me free stuff.

I just happened to be at Business Costco and it was on sale.
Plus calories from fat was only 30% and I don't like really greasy fish.

Tried the next 4 pieces at 425 convection on a rack for 16 minutes.
About the same as what they sell at Anthony's/Arnie's. Hmmmm
I'll try it at 475 for 15, should be just about right.

Thanks Pablo. I've tried the Ale Battered Trident Cod.
They don't carry that at the business Costco though.
Which is where I went because I needed a 14 oz can of anchovies, 5 pounds of Macaroni salad, and 2 pounds of 26/30 raw tail on cleaned shrimp.

450 for 15 minutes convection on a rack.
Pretty good, better than most restaurants in the North end but Scuttlebutt Brewery is still better.

I'll look at this next time I'm in Costo. I love quality battered Cod and have only found one place around this region that gets it right and affordable: Nisqually bar and grill, around exit 114 in Lacey. $12 all you can eat on Fridays. Really delicious.
