But this time, the wife approved! Santa thought that I needed more smoked meat in my life, so he(she) brought me this to open! It's electric, it's fairly large and I can't wait to use it. Santa also brought me Pecan, Alder and Apple Bisquettes, and I already have a nice wireless meat thermometer. So, first easy smoke? Ideas? Need to show Santa that I am capable of smoking, so I can ask for a RecTec smoker once the covered kitchen is built.

My claim to fame when I still had my smoker was tri tip roasts. There was a couple of times I didn't even get a bite before it was gone. Pork ribs are never a bad answer.

+1 on pork ribs +1 on cash and carry ribs
Also, might I suggest beef ribs? Those are easy as well. Pork shoulder for pulled pork is also easy.

Cut out the core, put half a stick of butter in the hole along with a teaspoon of your favorite rub. Smear the outside with some butter and sprinkle with rub. Wrap in foil and put in smoker for the last couple hours of your smoking session (2-3 depending on size) until tender. Make sure the "hole" is up".

A great homemade rub for pork ribs & pulled pork can be found at: http://amazingribs.com/recipes/rubs_pastes_marinades_and_brines/meatheads_memphis_dust.htmlThis has become my staple rub for pork. Sounds like the pork ribs have it Your choices are then St Louis Cut or baby back ribs. Here's another great article on pork ribs http://amazingribs.com/recipes/porknography/best_BBQ_ribs_ever.htmlOn ribs I only use the meat thermometer to monitor grill temperature and don't bother with meat temperature. At a grill/smoker temperature between 200-250 degrees I use a rough guideline of 5-6 hours for SLC and 3-4 hours for baby backs. When the time is about up then open up the smoker, pick up one end of the rack with tongs for the bend/bounce test. If the meat between the ribs cracks open slightly then you're good to go. Another great option is pulled pork (pork shoulder roast). Very forgiving and by far easier than brisket to turn out a great product.
