4 lb roast on a bed of carrots and onions with mini potatoes. Oh yeah. My house smells GREAT right now.

I put a lemon/garlic steak rub powder on it, then softened butter on top and bottom, right in the pan with some rosemary branches. Sometimes I'll poke fork holes in it and shove the rosemary tines into the holes, but I was too lazy to do it to a roast that big haha.

What kind of roast do you recommend for oven cooked and to come out tender and rare to med rare. I have been cooking a couple of different roasts that Safeway butchers say are good and they are tough. HELP.....I like them cut thin with brown gravy

Any roast will become tender if you keep the juices sealed in (tent it) and keep it at a nice slow cook. If I'm putting a roast in the oven, I'll usually go at 250 for the majority of the cook time and then crank it up to 350 for the last half hour or hour.
