That seems to come up whenever i talk about Smoking some BBQ "Fatties"  Sausage, Cheese, Anaheim peppers and some red and yellow Peppers in a Roll wrapped with Bacon. Threw a few pork butts in the rectec overnight to have for lunch today.
Pict of one as i pulled it off @170*. That one was cubed up , added sauce and rub and more sauce and rub and it became burnt ends. The other one was given the Texas crutch treatment as it had to be ready by noon. Chunk of leftovers went back to uw with my son. Rest gets vac sealed into 1-1.5# portions for later meals. We got in on the sterino farms fall squash give away the other day and came home with 20 squash total and a few other things. Tonights dinner was turban squash stuffed with stuffing and garlic jack cheese with a side of fennel bulb cooked in olive oil apple cider vinegar soy sauce and brown sugar. Delicious stuff.
