They are hard to do without using ALOT of fat/oil.... I used turkey fat from the carcass I boiled down... You slice the potato and the 'try' to force fat/oil AND seasoning INTO the slices.... you need let it cook for 20-30 minutes until it opens up --- but even then its hard to get it uniform.... I haven't figured out the secret yet to make them awesome without flooding them with fat/oil.
Next ones I'm going to try par boiling them first. It wasn't worth it for one.
And YES - I did it in the oven.... I just wanted to use that sweet little CI pan that gets no love anymore.... Sorry I missed that part.

Gotcha.
Yeah, if you baste more frequently with butter, as the slices open more and more in the oven, that works fairly well.
