Here is a simplified way of making it.

1) Throw down your cubed tofu with garlic, onions and olive oil.
2) Add 2lbs-3lbs of shrimp and stir in
3) Add 2 tblsp of curry powder- stir into the mix
4) Add 1/2 can of tomato paste
5) Add a can of coconut milk and bring to a simmer 5-10mins
6) Add spinach and continue to simmer for a couple more mins or until the spinach is cooked
7) Salt/ pepper to taste

Thank you kindly sir. I have already copied/pasted and sent by SMS and email, printing it out now and sticking to the fridge and spice rack.
I'd make it myself, but I am banned from chef duties until after the steady rains arrive because of the workload.

Beat some pork chops flat, dredged them in flour and S&P, ran 'em through an egg wash, dropped them into a pile of Panko then oil fried them.

Cut 'em into thin slices and laid it over a bed of chopped Napa Cabbage. Add some Katsu sauce and I had Tonkatsu!
