This undue haste in making what is traditionally a years-long aging process strikes me as similar to standing in front of the micro wave and screaming "Hurry Up!!"
Instant gratification often makes for a diminished experience. Curious how this plays out. Hopefully it won't be a waste of good everclear.

Oak on the left, cherry on the right, and then a glass with a roughly 50-50 mix of the cherry and tap water. (Remember, the original is Everclear, 190 proof.)
I started by taking a small taste out of both jars. Yeah, it was 190 proof so it definitely had some Everclear burn, but there was a definite sweetness and a nice smell to both of them. I couldn't really tell a difference between the two wood types, though. So I poured that little bit of cherry and mixed it with water, and sat down for a drink.
Yes, as I said, a nice aroma and a tasty sweetness. The Everclear burn is still there to some degree, so I'm not going to try to tell you that this is the liquor of your dreams, it's probably not. But I enjoyed it enough that I'll plan to keep drinking it, and depending on how I feel later down the road, maybe I'll try it again with a bottle of cheap vodka that I've got sitting around, maybe that will be better than the Everclear.
For now, I'm going to leave the jars as-is, and let the wood keep soaking and try to get even more flavor out of it.
Next question: When I'm done with this project, do I put the wood chips on the grill when cooking a steak?
You know, I've really been enjoying this "whiskey."
I still have both jars, both with the wood still in them, both getting a little stronger-smelling/tasting every day. Every night I pour a little out of one or the other, pour a little cold water into it to dilute it (it's Everclear, remember), and start sniffing and sipping.
There's a little burn to the drink since it's Everclear, but I actually don't mind that. I do love the smoky smell of it, and the taste too. I'm not going to try to convince anyone that this is better than your favorite liquor, but I'm enjoying the experience.
I'm still planning to make more, probably with a bottle of vodka next time, and maybe I'll go a little heavier on the wood.
