WOK 101

Can anyone recommend a good WOK?
We seem to keep buying the shit ones.
I'd like to get a good keeper, if I could find one.
Need suggestions.

YES! That one I picked at Amazon isn't coated. It's got everything but the food.

It has a Nitride coating....

"Nitriding Process
360° whole body nitriding process to form a dense oxidized surface layer. avoid rusting and No chemical coating."

Have you ever seen a Chinese restaurant use a WOK that was anything but bare Carbon Steel?

A little undecided on getting the flat bottom. We have gas here and having a round bottom with the holder would work well.

When you go to that link, go to where you can change the visible reviews from “Top Reviews”, to “Recent Reviews”.

You’ll notice a pattern.

A lot of the good reviews are for a ‘gift’, so they don’t have to prove to have bought it, or they are short or 1 word reviews.

Who goes on Amazon to review a gift?

But, if you do change & look at it, the authentic reviews all say it’s crap, like this one:

There were enough good reviews so I bought this wok. I followed the instructions as to how to treat it. Was not long before the coating came off. Now everything I cook in it sticks to the bottom and burns, even with spraying a ton of oil/nonstick spray and turning frequently. I like all the utensils that came with it so glad I have those, but have to buy a new wok again. Will spend the money and get a better one. Tough when money's tight.


Why would you trust some ‘special coating’ you’ve never heard, written in broken-English?

All recommendations point to Carbon Steel, including J Kenzi-Lopez Alt, who just wrote an entire book on Wok cooking.

I was poking about on the map some time ago and saw something called Uwajimaya in Nampa or Meridian. But nothing on their website shows a shop in ID. hmmmm
What about asking the hunnies at the asian grocery? (tell them Jim says "hi" :wink05: )
