Hi all Merry Christmas. With the big holiday fast approaching I was wondering what different folks are thinking of cooking for Christmas this year. We're thinking to cook up a Rosa di Parma which is basically a butterflied prime beef tenderloin layered with prosciutto and freshly shredded parmesan then rolled up to cook. My wife loves Filet Mignon so I am thinking this will be a big hit at the homestead. Also our first time making this dish: https://www.foodrepublic.com/recipes/beef-tenderloin-rosa-di-parma-recipe/Not sure at all what we'll fix with this for sides so our meal planning is still a work in progress. Looking forward to hearing what other folks are planning also.

We are doing our standard fare: Costco Ham, au gratin potatoes, grilled asparagus, and fresh home made rolls.
We take the ham bone and leftover ham and make ham and beans for New Years Eve,

I learned a while back that you don't ever want to start a thread with too big of a bang, because it doesn't leave anyone else with much to contribute of interest. We usually go to Costco and get a nice 3 bone roast and their king crab legs. Costco seems to always have the thickest, meatiest legs (let the jokes ensue...)

Good call on the Costco King Crab legs. The Wife brought home some of those Sunday and they were huge. Tonight is a 3 bone Ribeye roast in the Smoker.
