Rib eye SV @ 130 degrees for 2 hours. Asparagus 10 min in salted boiling water. Hollandaise sauce. 3 oz. lobster tails broiled for 5 minutes.

I'd eat it but the time nOpe....shrimp scampi tonight quick and easy, no pic I was hungry.

SV is not something new, just unfamiliar for the uninitiated. The next project that will make you fast food junkies cry will be dry aging. It's not like I had to play with it for 2 hours, it just sits there. Then I grill it for about a minute on each side for a moist tender steak that is MR from edge to edge.

It's like any thing if you don't know what the limitations are it can suck. I know of many people that have turned a steak totally inedible on a grill. SV is very forgiving, so that you are less likely to over cook something. "Your mind is like a parachute, it works better when it's open".
